Hideto Nishikawa, chef at "Japanese Cuisine Hanagatami," has been awarded the "FELISSIMO Future Chef Award" at the 2022-2023 Japanese Cuisine Grand Prix. This prestigious culinary contest, organized by the Japanese Culinary Academy, was established in 2007 to promote Japanese cuisine and foster the next generation of chefs. This year marks the 8th edition of the event.
On March 5, 2023, the final round was held, where 12 contestants, selected from about 100 applicants nationwide, competed. The task was to create a "Shokado Engetaka Bento" using 42 ingredients provided on the day. The contestants had to plan a menu on the spot and complete the preparation within 4 hours.
Nishikawa's bento expressed the arrival of spring, using seasonal ingredients such as clams and rapeseed blossoms. He beautifully portrayed cherry blossoms using lotus root, creating a bento that allowed diners to experience the essence of spring visually. Drawing on his extensive knowledge, experience, and refined skills, he was able to win this prestigious award.
